2-3 Boneless skinless chicken breasts, grilled chopped
1 Head Iceberg lettuce
Spinach, or other lettuce if desired
2 Bunches Green onions
2 Carrots, peeled and diced
2 Stalks celery, diced
Asian dressing (Recipe follows)
Wash lettuce, shred into bite size pieces. Toss all ingredients together. Add dressing to individual servings to keep salad crisp.
1 Cup light vegetable oil
1/3 Cup rice vinegar
1/3 Cup soy sauce
1-2 Tbsp. fresh garlic, minced
1-2 Tbsp. fresh ginger, minced
2 Tbsp sugar
Mix together well and enjoy on salad.
